I love this recipe! It’s so delicious and you’re getting your healthy veggies and lean protein making for a wonderful carb protein snack/appetizer. Great to bring to parties or have in your fridge for a healthy snack between meals!
Ingredients:
12 romaine lettuce leaves
Filling:
2 packages cooked shrimp – defrosted and chopped
(could substitute with chicken or tufu)
2 avocados chopped
1/2 cucumber chopped
1 red bell pepper chopped
2 tomato chopped
Marinade:
4 slices of red onion diced
4 cloves of garlic diced
3 tbsp olive oil
2 tbsp vinegar
2 tbsp orange juice
Dash of salt and pepper
Dash of cayenne pepper (optional)
Directions
- Defrost shrimp (rinse with cold water or put in fridge the day before)
- Add the rest of the filling ingredients in a bowl with shrimp and marinade mix
- Wash and dry romaine lettuce leaves
- Scoop filling into each lettuce leaf
Serves 8
Substitutions: replace shrimp with diced cooked chicken or tofu
